Christmas Breakfast Casserole

My mom made this breakfast casserole every Christmas growing up, so naturally I wanted to keep the tradition with my family. You could absolutely tweak the recipe and add items such as bacon or veggies, but we like to keep it simple.

You will need:

-8 eggs (my favorite are vital farms)

-2 cups of Milk (we use low-fat)

-8 ish pieces of bread of choice (this year we used Sar Lee Artesano)

-1 cup shredded cheese of choice (I prefer Colby jack or cheddar)

-salt and pepper

-one package of breakfast sausage

  1. Tear up bread into small pieces and put on the bottom of a greased 13x9 inch pan.

  2. Beat 8 eggs and 2 cups of milk, then add in 1 cup of shredded cheese and salt and pepper to taste.

  3. Cook sausage and add to egg mixture.

  4. Pour egg and sausage mixture over the bread and let sit for 3 hours or overnight. (I always prep the night before)

  5. Cook at 375 for 45 minutes.

Christmas morning can be chaotic with little kids so I always prepare this the night before and preheat the oven as soon as we wake up. I let it cook while we open gifts, which is perfect! I hope you enjoy this breakfast casserole as much as our family does. Merry Christmas!

If you are looking to live a healthy lifestyle, start with the 80/20 rule. Eat healthy 80% of the time, and let yourself indulge 20% of the time. For me, I try to eat as healthy as I can during the week and meal prep my lunches to eat healthy at work. That way, when the weekend comes around I don’t feel guilty about enjoying an ice cream sandwich with my son or grabbing some to-go food for dinner.

So I wanted to share 5 things that are always in my fridge/pantry. As a busy, working mom, I am always on the go, so I need access to quick, healthy snacks.


  1. String Cheese

    My favorite brand is Frigo Cheese Heads Light. If I eat them as a snack I eat 2-3.

  2. Beef Jerky

    Another healthy high protein snack. We buy a large bag from Sam’s.

  3. Egg Whites

    I love to make an egg white frittata to start my day! My favorite things to add are spinach, mushrooms, and tomatoes. 

  4. Greens (spinach and kale)

    These are great to add into a smoothie, omelet, or even make a salad. 

  5. Unsweetened Vanilla Almond Milk

    I use this in my protein shakes and sometimes as my coffee creamer. 


Living a healthy lifestyle doesn’t mean keeping yourself restricted all of the time. The key for my successful lifestyle is all about balance. Nourish your body and give yourself grace when it’s needed.
