Christmas Breakfast Casserole
My mom made this breakfast casserole every Christmas growing up, so naturally I wanted to keep the tradition with my family. You could absolutely tweak the recipe and add items such as bacon or veggies, but we like to keep it simple.
You will need:
-8 eggs (my favorite are vital farms)
-2 cups of Milk (we use low-fat)
-8 ish pieces of bread of choice (this year we used Sar Lee Artesano)
-1 cup shredded cheese of choice (I prefer Colby jack or cheddar)
-salt and pepper
-one package of breakfast sausage
Tear up bread into small pieces and put on the bottom of a greased 13x9 inch pan.
Beat 8 eggs and 2 cups of milk, then add in 1 cup of shredded cheese and salt and pepper to taste.
Cook sausage and add to egg mixture.
Pour egg and sausage mixture over the bread and let sit for 3 hours or overnight. (I always prep the night before)
Cook at 375 for 45 minutes.
Christmas morning can be chaotic with little kids so I always prepare this the night before and preheat the oven as soon as we wake up. I let it cook while we open gifts, which is perfect! I hope you enjoy this breakfast casserole as much as our family does. Merry Christmas!
